Family-friendly beef and green chile tamales with homemade masa and spicy hot sauce drizzle.
Ingredients:
  • 5 pounds ground beef
  • 1 (4 ounce) can chopped roasted green chile peppers
  • 5 teaspoons hot pepper sauce (such as Cholula®)
  • 1 tablespoon kosher salt
  • 4 cloves garlic, pressed, divided
  • 1 tablespoon minced white onion
  • 2 teaspoons ground black pepper
  • 1 teaspoon ground cayenne pepper
  • 1 (2 pound) package yellow masa flour
  • 2 tablespoons lard
  • 2 cups water, divided
  • 50 dried corn husks
  • 8 ounces grated Chihuaua cheese, or to taste
  • 5 tablespoons chili powder
Instructions:
  • In a large cast-iron skillet over medium heat, sear the beef along with green chiles, hot sauce, salt, 3 cloves of garlic, onion, black pepper, and cayenne pepper. Stir and cook until the beef is fully browned, about 10 to 15 minutes. Reserve the flavorful drippings after draining.
  • In a large bowl, mix together the reserved drippings, masa, lard, and baking powder until combined. Gradually add water, 1 teaspoon at a time, until the mixture reaches a biscuit dough consistency. Shape the mixture into 50 equal balls and flatten them into circles between sheets of waxed paper on two cutting boards.
  • Wrap each dough circle in a corn husk, filling with 3 tablespoons of beef mixture and a sprinkle of cheese. Roll up the tamale, folding the sides in and sealing one end.
  • In a small saucepan over medium-high heat, simmer 1 clove of garlic, 1 cup of water, and chili powder until it boils. Remove from heat.
  • Place the tamales in a steamer basket over simmering water in a double boiler, folded ends-down. Steam covered for 20 minutes. Remove from heat, unwrap, and top with chili sauce. Repeat with the rest of the tamales.
