Hearty beef stew infused with rosemary and parsley, perfect for a delicious and comforting meal, even more flavorful as leftovers!
Ingredients:
  • 3 tablespoons vegetable oil
  • 2 pounds cubed beef stew meat
  • 4 cubes beef bouillon, crumbled
  • 4 cups water
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • 0.5 teaspoon ground black pepper
  • 3 large potatoes, peeled and cubed
  • 4 carrots, cut into 1 inch pieces
  • 4 stalks celery, cut into 1 inch pieces
  • 1 large onion, chopped
  • 2 teaspoons cornstarch
  • 2 teaspoons cold water
Instructions:
  • In a large pot or Dutch oven, heat some oil over medium-high heat, then brown the beef until it's nicely cooked.
  • In a pot, whisk together bouillon and 4 cups of water until fully dissolved. Add rosemary, parsley, and pepper, and bring to a boil. Reduce heat, cover, and simmer for 1 hour. Add potatoes, carrots, celery, and onion, and stir well.
  • Mix 2 teaspoons of cornstarch with cold water until smooth, then stir into stew. Cover and let simmer until beef is tender, approximately 1 hour.
