Classic collard greens simmered with bacon, potato, and wine vinegar for sensational flavor.
Ingredients:
  • 2 large potatoes, peeled and cubed
  • 3 bunches collard greens - rinsed, stemmed and thinly sliced
  • 4 slices bacon
  • 0.5 onion, diced
  • 0.5 cup red wine vinegar
Instructions:
  • In a large pot, cover the potatoes with water and bring to a boil over medium heat. Just before the potatoes are cooked, add the collards to the pot.
  • In a deep skillet over medium-high heat, cook the bacon until evenly browned for about 10 minutes. Transfer the bacon to paper towels to drain. Saute the onion in the bacon grease until tender. Drain the onions, add them to the greens along with the crumbled bacon, and stir in the wine vinegar. Simmer over low heat until the greens are tender, approximately 1 hour.
