Sizzling squid

Mediterranean-inspired surf and turf dish bursting with bold flavors and harmonious ingredients.
Ingredients:
  • 2 large super-ripe tomatoes (300g total)
  • 300 g whole squid cleaned, gutted
  • 70 g chorizo or spicy sausage
  • ½ a bunch of mint (15g)
  • 1 lemon
Instructions:
  • Grate the tomatoes and discard the skin. Prepare the squid by slicing it open, scoring the inside, seasoning with sea salt and black pepper, and slicing the chorizo. Pick the mint leaves. Heat a non-stick pan on high heat, add olive oil, cook the squid scored side down, press down with a fish slice, then add tentacles, chorizo, and half the mint leaves. Cook for 3 minutes, tossing regularly. Transfer squid to a plate. Add tomatoes, lemon juice, cook until thickened. Divide onto plates. Slice squid, scatter over sauce, mint leaves, and serve with lemon wedges for squeezing.
