Spanish-style sizzled shrimp with sherry, garlic, olive oil, and paprika; versatile with squid or scallops.
Ingredients:
  • 0.25 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 1 teaspoon paprika
  • 1 pound medium shrimp, peeled and deveined
  • 2 tablespoons dry sherry
  • salt and freshly ground black pepper to taste
  • 2 tablespoons chopped Italian flat leaf parsley
Instructions:
  • In a large skillet over medium-high heat, sizzle olive oil with garlic, red pepper flakes, and paprika until the oil is hot and garlic turns golden, 1 to 2 minutes. Turn the heat to high, then add shrimp and cook until they're bright pink on the outside and opaque inside, about 3 minutes.
  • Deglaze the skillet with sherry, boiling it while using a wooden spoon to scrape off the flavorful browned bits. Season with salt and pepper to taste.
  • Sprinkle servings with freshly chopped parsley for a burst of vibrant flavor and color.
