Sizzling Swordfish Fajitas

Spicy swordfish wraps burst with flavor from broiled steaks and fresh salsa.
Ingredients:
  • 2 medium tomatoes, finely chopped (1 1/2 cups)
  • 8 medium green onions, sliced (1/2 cup)
  • 2 cloves garlic, finely chopped
  • 1 small fresh jalapeño chile, finely chopped
  • 2 tablespoons chopped fresh cilantro
  • 2 tablespoons lime juice
  • 1/2 teaspoon ground cumin
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon coarsely ground pepper
  • 1 lb swordfish or other firm texture fish steaks
  • 6 tortillas from 1 package (11 oz) Old El Paso™ Flour Tortillas for Burritos (8 Count), warmed
  • 1 1/2 cups shredded lettuce (1/2 head)
  • 1 small red bell pepper, finely chopped (1/2 cup)
Instructions:
  • Combine all salsa ingredients in a glass or plastic bowl, mixing until thoroughly blended. Cover and refrigerate until ready to serve.
  • Preheat broiler in the oven. Grease a broiler pan rack. Combine lime juice, oil, and pepper in a small bowl; use it to coat the fish. Arrange the fish on the rack in the broiler pan. Broil about 4 inches from heat for 10 to 15 minutes, flipping once halfway through, until fish flakes easily with a fork.
  • Divide the fish into bite-sized pieces. Place 1/3 cup of fish in the center of each tortilla. Top with lettuce, bell pepper, and salsa. Fold the tortilla by bringing one end up 1 inch over the filling, then folding the right and left sides over the folded end, and finally folding down the remaining end.
