Spring lettuce with aioli

Sizzling spring lettuce dish perfect for any meal or gathering.
Ingredients:
  • 60g chorizo, finely chopped
  • 50g red capsicum, finely chopped
  • 1 garlic clove, thinly sliced
  • 20.00 ml red wine vinegar
  • 1 baby cos lettuce, halved
  • 39.60 gm aioli
  • Green shallot, thinly sliced, to serve
  • Black pepper, to taste
Instructions:
  • Heat extra virgin olive oil in a frying pan over medium heat. Sauté chorizo until golden, then add red capsicum and cook for 1 minute. Add garlic and cook until aromatic. Remove from heat, let cool for 1 minute, then stir in red wine vinegar.
  • On a plate, arrange halved baby cos lettuce. Top with a dollop of creamy aioli. Drizzle with warm dressing. Scatter thinly sliced green shallot on top. Finish with a sprinkle of freshly ground pepper.
