Remoulade lettuce cups with toasted walnuts

Savory root vegetables, sweet apples, and creamy aioli in crunchy edible cups.
Ingredients:
  • 1 sweet potato, peeled, cut into matchsticks
  • 2 large beetroot, peeled, cut into matchsticks
  • 2 green apples, peeled, cut into matchsticks
  • 6 large radish, trimmed, cut into matchsticks
  • 235g (1 cup) bought aioli
  • 21.00 gm lemon juice
  • 11.80 gm Dijon mustard
  • 2 baby cos lettuces, leaves separated
  • 55g (1/2 cup) walnuts, toasted, coarsely chopped
Instructions:
  • Combine the sweet potato, beetroot, apple, and radish in a large mixing bowl.
  • In a small bowl, vigorously mix together the aioli, lemon juice, and mustard until smooth. Season with salt and pepper. Pour the mixture over the sweet potatoes and gently mix until well combined.
  • 1. Place the lettuce on a big platter. 2. Fill the lettuce leaves with the sweet potato mixture. 3. Top with walnuts for crunch.
