Sizzling Chicken Stir-Fry

Asian-inspired chicken and vegetable rice bowl, bursting with flavor and sure to impress at dinner tonight!
Ingredients:
  • 1 cup water
  • 1 cup uncooked instant rice
  • 4 boneless, skinless chicken breasts (about 1 pound total)
  • 1 tablespoon vegetable oil
  • 1 bag (16 ounces) frozen broccoli, carrots and water chestnuts (or other combination)
  • 1/3 cup stir-fry sauce
Instructions:
  • Place water in a saucepan and cover it with a lid. Bring it to a rapid boil over medium-high heat, then remove from heat.
  • Stir the rice into the water with a wooden spoon and cover with a lid. Place the saucepan on a pot holder on the counter while you prepare the chicken.
  • Dice the chicken on the cutting board with a sharp knife into bite-size pieces.
  • Heat vegetable oil in a skillet over medium-high heat until hot. Test the heat by sprinkling a few drops of water - if bubbles jump around, it's ready. Add chicken and cook for 2 minutes, stirring constantly with a pancake turner.
  • Combine the frozen vegetables with the chicken and cook for 5 minutes, stirring constantly, until the vegetables are slightly softened and the chicken is fully cooked through. Verify the doneness of the chicken by cutting into a piece with a clean knife.
  • Pour the fragrant stir-fry sauce into the savory chicken mix. Sauté and stir for about 1 minute until the sauce is heated through. Serve this delectable mixture over steaming rice.
