Spicy sausage and vegetable casserole

Spicy sausage casserole bursting with flavors, baked to perfection with fresh herbs and veggies.
Ingredients:
  • 36.40 gm olive oil
  • 500g chorizo sausages, chopped into 3cm pieces
  • 150g rindless bacon, roughly chopped
  • 2 cloves garlic, chopped
  • 2.50 gm paprika
  • 400g can diced tomatoes
  • 510.00 gm chicken stock
  • 750.00 ml frozen mixed vegetables
  • 125.00 ml parsley, chopped
  • 1 onion, halved, thinly sliced
Instructions:
  • Heat oil in a large, heavy-based saucepan over high heat. Sear sausage pieces for 1-2 minutes on each side until golden brown. Drain on paper towels.
  • In a pan, sauté bacon and onion over medium heat for 5 minutes until onion is soft. Stir in garlic and paprika; cook for 1 minute. Add tomato and stock, bring to a boil. Return sausages to the pan, simmer on low for 10 minutes.
  • Add a colorful assortment of vegetables to the pot and let them simmer without a lid for 10 minutes. Sprinkle in fresh parsley and serve the flavorful mixture with fluffy steamed rice.
