Elevate your midweek dinner with this flavorful rice dish.
Ingredients:
  • 500g spicy lamb sausages (see note)
  • 18.20 gm peanut oil
  • 2 brown onions, thinly sliced
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp chilli powder
  • 400.00 gm basmati rice, rinsed
  • 1020.00 gm beef stock
  • 1 red capsicum, quartered, chopped
  • 125.00 ml basil leaves, torn
Instructions:
  • Preheat a large non-stick frying pan over medium heat. Lightly coat sausages with oil and cook for 8 minutes, turning occasionally until golden brown and cooked through. Transfer sausages to a cutting board and slice into 1cm-thick pieces.
  • In a large saucepan over medium heat, heat peanut oil until shimmering. Add onion and garlic, stirring often, until onion softens, about 3 minutes. Stir in cumin, coriander, turmeric, and chili and cook until fragrant, about 1 minute.
  • Place the rice in a saucepan and toss in the flavorful oil and spices. Add the stock and capsicum to the mix. Bring everything to a boil, then lower the heat and let it simmer covered for about 10 minutes, until the rice is cooked through and has absorbed the stock.
  • Mix in the savory sausage and fresh basil, cover the pot, then remove from heat. Let it sit for 5 minutes or until the sausage is warmed through. Ladle into bowls, season with salt and pepper, and serve your delectable creation.
