"Tropical twist on Aussie sausage roll for a quick and easy dinner."
Ingredients:
  • 1/2 fresh pineapple
  • 2 fresh jalapeno chillies, finely chopped
  • 1/2 small red onion, finely chopped
  • 30.00 ml finely chopped fresh mint leaves
  • 30.00 ml finely chopped fresh flat-leaf parsley leaves
  • 21.00 gm lime juice
  • 4 thick pork sausages
  • 4 long crusty bread rolls
  • Olive oil spray
  • 60g mixed salad leaves
  • 45.20 gm smoky barbecue sauce
  • Oven-baked thick-cut potato chips, to serve
Instructions:
  • Prepare the pineapple by peeling and coring it, then cutting it into thick wedges. Heat a barbecue grill or chargrill pan over medium-high heat. Grill the pineapple for 2 minutes, turning occasionally until lightly charred. Transfer the grilled pineapple to a chopping board, finely chop it, and place it in a serving bowl. Mix in jalapeño, onion, mint, parsley, and lime juice, stirring to combine.
  • Grill sausages until golden brown and cooked through, about 6 to 8 minutes, turning occasionally. Place on a plate and cover to keep warm.
  • Gently coat the top of the rolls with oil and grill for 1 minute until lightly charred. Split the rolls down the center and open them up. Divide salad leaves evenly among the rolls. Add 1 tablespoon of pineapple mixture on top of each. Arrange the sausages on top and drizzle with barbecue sauce. Finish by spooning a little more pineapple mixture over each. Serve with chips and the remaining pineapple mixture.
