Hawaiian Sausage and Rice Bake

Indulge in a tropical sausage and rice bake for a filling and flavorful dinner.
Ingredients:
  • 1 1/4 cups water
  • 2 tablespoons butter
  • 1 (6.2-oz.) pkg. fast-cooking long-grain and wild rice mix (with seasoning packet)
  • 1/2 cup pineapple preserves
  • 1 lb. cooked kielbasa, halved lengthwise, cut into 1-inch slices
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, cut into 3/4-inch pieces
  • 1 medium red bell pepper, cut into 3/4-inch pieces
  • 1 (8-oz.) can pineapple chunks in unsweetened juice, undrained
Instructions:
  • Preheat oven to 375°F. Boil water and butter in a small saucepan.
  • Combine all ingredients, including the seasoning packet, in a 2 1/2-quart casserole dish. Mix well and cover.
  • Bake at 375°F for 40 to 45 minutes until the rice is tender. Allow it to rest for 10 minutes before serving.
