Tropical Hawaiian fried rice with egg, pineapple, Chinese sausage, and Spam - a flavorful island favorite.
Ingredients:
  • 3 cups water
  • 1.5 cups uncooked jasmine rice
  • 2 teaspoons canola oil
  • 1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cubed
  • 0.5 cup sliced Chinese sweet pork sausage (lup cheong)
  • 3 eggs, beaten
  • 2 tablespoons canola oil
  • 0.5 teaspoon garlic powder
  • 1 (8 ounce) can pineapple chunks, drained
  • 3 tablespoons oyster sauce
  • 0.5 cup chopped green onion
Instructions:
  • In a saucepan, bring water and rice to a boil over high heat. Lower the heat to medium-low, cover, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed. Allow the rice to cool completely.
  • In a large nonstick skillet over medium heat, heat 2 teaspoons of oil. Brown luncheon meat and sausage in the hot oil, then transfer to a plate. Scramble beaten eggs in the same skillet and mix with the meat mixture on the plate.
  • In the same skillet, warm 2 tablespoons oil over medium heat. Stir in cooled rice until it starts to brown and is heated through, about 2 minutes. Sprinkle garlic powder over the rice and mix for about 1 minute to enhance the garlic flavor. Add cooked meats, scrambled eggs, pineapple, and oyster sauce. Stir everything together until heated through and well mixed, about 2 to 3 minutes. Finish by adding green onions before serving.
