Rhode Island-inspired mini pizzas for a taste of Italian bakery goodness in every bite!
Ingredients:
  • 2 pounds prepared pizza dough
  • 1 (28 ounce) can crushed tomatoes
  • 0.5 cup minced pepperoni
  • 0.25 cup olive oil
  • 3 tablespoons grated Romano cheese
  • 3 tablespoons white sugar
  • 1 teaspoon salt
  • 0.75 teaspoon minced garlic
  • 0.75 teaspoon dried oregano
  • 0.5 teaspoon freshly ground black pepper
Instructions:
  • Preheat your oven to a toasty 400 degrees F (200 degrees C) while you prepare your baking sheets by greasing them or lining them with parchment paper.
  • Shape half of the pizza dough into a rectangle on one prepared baking sheet, then do the same with the remaining dough on another sheet.
  • Combine crushed tomatoes, pepperoni, 1/4 cup olive oil, Romano cheese, sugar, salt, garlic, oregano, and black pepper in a bowl, ensuring sugar and salt are dissolved. Evenly spread half of the sauce over each crust, reaching the edges, then drizzle 2 tablespoons of olive oil over each pizza.
  • Bake in the preheated oven for 15-20 minutes until the crust is crispy on the bottom and the sauce looks dry at the edges while staying moist in the middle.
  • Allow the pizzas to cool to room temperature on wire racks for approximately 20 minutes. Then, slice each pizza into eight 9x3-inch strips.
