Delicious Island-style side dish made with plantains.
Ingredients:
  • 4 underripe plantains, peeled and cut into 1-inch slices
  • vegetable oil
  • 1 tablespoon finely chopped garlic
  • 2 to 3 cups beef broth, warmed
  • 1/4 teaspoon freshly ground black pepper
  • Chopped fresh cilantro leaves, if desired
Instructions:
  • In a deep 12-inch skillet, heat 1 inch of oil over medium-high heat until it shimmers (about 350°F). Fry plantain slices until they are golden brown and tender, then remove them from the oil.
  • Gently smash the plantains using a flat-bottomed glass bottle or a tostonera if available. Place smashed plantains back in the skillet and cook for 30 seconds on each side until slightly crispy. Transfer to a large bowl and let them cool slightly.
  • Combine plantains, garlic, and 1 cup of broth in a food processor. Pulse until mixture resembles chunky mashed potatoes, gradually adding broth in 1/4 cup increments. Season with salt and pepper; pulse until well combined.
  • Transfer the dish into a stylish serving bowl and top it off with fresh cilantro for a burst of flavor. Enjoy promptly.
