Delicious Puerto Rican Mofongo: Crushed fried green plantains with garlic, olive oil, and crispy pork rinds.
Ingredients:
  • 3 cups canola oil for frying
  • 3 cloves garlic, or to taste
  • 0.125 cup crushed fried pork skins
  • 2 green plantains, peeled and sliced into 1/2-inch rounds
Instructions:
  • In a deep-fryer or large saucepan, warm canola oil to 350 degrees F (175 degrees C). Crush garlic with olive oil using a mortar and pestle. Mix garlic blend with pork rinds in a large bowl; set aside.
  • Cook plantain chunks in hot oil until they are golden and crispy, but not brown, for around 15 minutes. Add the fried plantains to the bowl with the garlic mixture, mix well to coat, and use a pestle to mash until smooth. Season with salt to taste.
  • Shape the plantain mixture into two large balls or several small ones before serving.
