Create a guilt-free, plant-based twist on Puerto Rican mofongo using mashed boiled plantains combined with a flavorful tomato-sofrito sauce.
Ingredients:
  • 5 large green plantains, coarsely chopped
  • 1 (8 ounce) can organic tomato sauce
  • 1 small bunch cilantro, chopped, or to taste
  • 2 tablespoons homemade sofrito
  • 2 tablespoons olive oil, or to taste, divided
  • 1 clove garlic, minced
  • 1 (.18 ounce) packet sazon seasoning
  • 0.5 cup vegetable broth, or to taste
Instructions:
  • Fill a 1-quart pot with water and bring to a boil. Add plantains and a pinch of salt. Cook until easily pierced with a fork, approximately 25 minutes.
  • Mash plantains, tomato sauce, cilantro, sofrito, 1 tablespoon of olive oil, garlic, and sazon in a mortar or glass bowl. Add the remaining 1 tablespoon of olive oil and vegetable broth as needed until the mofongo sticks together but is not too wet. Season with salt and pepper.
  • Present the mofongo on a bed of the remaining aromatic vegetable broth in a lovely bowl.
