Savory sardines and tangy tomatoes stewed with onions, served atop fluffy white rice - a tropical breakfast delight.
Ingredients:
  • 1 tablespoon coconut oil
  • 1 roma (plum) tomato, diced
  • 0.25 cup sliced white onion
  • 1 small garlic clove, minced
  • 0.125 teaspoon minced scotch bonnet chile pepper
  • 2 (3.75 ounce) cans sardines packed in soybean oil
  • salt and ground black pepper to taste
  • 2 cups cooked white rice
Instructions:
  • In a skillet over medium heat, melt coconut oil then add tomato, onion, garlic, and scotch bonnet chile pepper. Sauté the mixture until the onion is nearly translucent, around 5 minutes, stirring occasionally.
  • Add the sardines and soybean oil to the tomato-onion mixture, then gently mash the fish with a fork until well combined. Cover the skillet, lower the heat, and cook until the sardines are heated through, which should take about 3 minutes. Season with salt and pepper before serving the sardine mixture over rice.
