Hawaiian-style smoked sausage stir-fry with sweet and tangy sauce over fluffy rice.
Ingredients:
  • 2 cups white rice
  • 4 cups water
  • 12 ounces country-style smoked link sausage
  • 0.5 cup water
  • 1 large onion, sliced
  • 1 large green bell pepper, cut into 1-inch pieces
  • 1 cup diagonally sliced celery, 1 inch thick
  • 1 (14 ounce) can whole peeled tomatoes, quartered
  • 1 cup beef broth
  • 1 (8 ounce) can pineapple rings in juice, cubed and juice reserved
  • 0.25 teaspoon garlic powder
  • 1 tablespoon brown sugar
  • 2 tablespoons cornstarch
Instructions:
  • In a saucepan, bring rice and 2 cups of water to a boil. Cover, lower the heat to medium-low, and simmer for 20 to 25 minutes until the rice is tender and the liquid is absorbed.
  • 1. In a skillet, add sausages and 1/2 cup of water over medium heat. Cover and cook for about 5 minutes until heated through. Slice sausages thinly. 2. Cook onion, green pepper, and celery with sausages in a large skillet over medium heat until vegetables start to soften, approximately 5 minutes.
  • Combine tomatoes, beef broth, pineapple, garlic powder, black pepper, and brown sugar with sausage mixture. Cook and stir until brown sugar dissolves and mixture simmers. Blend reserved pineapple juice with cornstarch in a small bowl until smooth. Add cornstarch mixture to sausage mixture and cook until sauce thickens and becomes clear, about 2 minutes. Serve over cooked rice.
