Delicious pineapple chili with a hint of sweetness. Easily halve the recipe for a smaller serving size.
Ingredients:
  • 2 pounds ground beef
  • 6 onions, chopped
  • 2 red bell peppers, seeded and chopped
  • 2 (16 ounce) cans stewed tomatoes, with juice
  • 2 (15.5 ounce) cans kidney beans, with liquid
  • 1 (16 ounce) can tomato sauce
  • 1 (16 ounce) can pineapple chunks, drained
  • 2 tablespoons chili powder
  • 2 teaspoons salt
Instructions:
  • First, heat a large Dutch oven over high heat until it's nice and hot. Add the ground beef and cook it just until it's barely pink, making sure to constantly stir and break it into small pieces. Next, add the onions and bell pepper, and cook until the beef is nicely browned, and the onions are soft and see-through, which should take about 5 minutes. Finally, pour the meat into a large mesh strainer and press to remove any extra fat.
  • Return the meat to the Dutch oven and add stewed tomatoes, kidney beans, tomato sauce, and pineapple chunks. Season with chili powder and salt. Bring to a boil, then simmer uncovered on medium-low heat for 10 minutes until the chili reaches your preferred consistency.
