Hawaiian-style fish taco with mahi mahi and mango salsa.
Ingredients:
  • 1 mango - peeled, seeded, and chopped
  • 2 avocados - peeled, pitted, and chopped
  • 1 cup chopped tomato
  • 0.5 cup diced red onion
  • 0.5 cup diced red pepper
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons canola oil
  • 1 lime, juiced
  • 1 teaspoon cider vinegar
  • 1 dash hot pepper sauce, or to taste
  • 8 taco shells
  • 4 (6 ounce) mahi mahi fillets, cut into 1-inch slices
  • 1 teaspoon paprika
  • 0.5 teaspoon salt
  • 2 tablespoons olive oil
Instructions:
  • Combine the mango, avocado, tomato, red onion, red pepper, parsley, canola oil, brown sugar, lime juice, cider vinegar, hot pepper sauce, salt, and ground black pepper in a bowl. Chill the salsa in the refrigerator for a minimum of 1 hour before serving.
  • Preheat your oven to a toasty 325 degrees F (165 degrees C).
  • Crisp up taco shells in a preheated oven for about 5 minutes.
  • Season mahi mahi generously with a flavorful mix of ground black pepper, paprika, and salt.
  • In a skillet over medium-high heat, heat up the olive oil. Cook the mahi mahi until it easily flakes with a fork, about 3 minutes per side.
  • Fill taco shells with slices of fresh and flavorful mahi mahi, then generously top them off with zesty mango salsa for a burst of tropical flavor.
