Spicy Sausage-Vegetable Strata

Spicy sausage adds a fiery kick to this vibrant baked vegetable, egg, and cheese medley.
Ingredients:
  • 1 pound bulk hot or spicy pork sausage
  • 1 medium onion, chopped (1/2 cup)
  • 1 loaf (about 10 inches) French bread, cut into 3/4-inch slices
  • 1/2 cup roasted red bell peppers, from 7-ounce jar, cut into 1/4-inch strips
  • 2 medium zucchini, thinly sliced (2 cups)
  • 6 eggs
  • 3/4 cup ricotta cheese
  • 2 cups milk
  • 1/2 cup grated Parmesan cheese
Instructions:
  • In a 10-inch skillet set over medium heat, cook the sausage and onion, stirring occasionally, until the sausage is fully cooked; then drain well.
  • Layer bread slices neatly in a 11x7x1 1/2 inch rectangular baking dish. Spread sausage mixture evenly over the bread. Sprinkle bell peppers and zucchini on top.
  • In a medium bowl, combine eggs and ricotta cheese using a fork until blended. Add milk, then pour mixture over baking dish. Sprinkle with Parmesan cheese, cover tightly, and refrigerate for at least 2 hours, but no longer than 24 hours.
  • One hour before serving, preheat the oven to 350°F. Bake uncovered for 45 to 55 minutes until the top is puffed and the center is set. Serve immediately.
