Try this mouthwatering Hasselback Chicken filled with Mediterranean flavors. Easy to make with only 6 ingredients and 20 minutes prep. Embrace the rustic look and pair it with a side salad or roast potatoes. Bon appétit!
Ingredients:
  • 4 RSPCA Approved Chicken Breast Fillets
  • 45g (1/4 cup) drained semi-dried tomato strips in oil, oil reserved
  • 85g (1/3 cup) roasted or chargrilled red and yellow capsicums, cut into strips
  • 1 small zucchini, thinly sliced
  • 1/2 small red onion, thinly sliced
  • 55g (1/2 cup) grated mozzarella
Instructions:
  • Preheat your oven to 180C/160C fan-forced. Lightly grease a baking tray. Score the chicken breast fillets with deep cuts about 1cm apart, ensuring not to cut all the way through and keeping the thinner ends intact. Arrange the chicken on the prepared tray.
  • Stuff cuts with tomato, capsicum, zucchini, and onion. Top with mozzarella and drizzle with 2 tablespoons of reserved tomato oil.
  • Bake the chicken for 20 minutes until it's fully cooked. Switch to the oven grill and broil for 5 minutes until golden brown on top. Serve.
