Mediterranean Shrimp with Bulgur

Quick and flavorful Mediterranean skillet shrimp and bulgur dish topped with fresh parsley. Ready in just 25 minutes.
Ingredients:
  • 2 cups water
  • 1 cup uncooked bulgur wheat
  • 2 teaspoons olive oil
  • 1 medium onion, chopped (1/2 cup)
  • 1/4 cup dry white wine or nonalcoholic wine
  • 2 cans (14.5 oz each) diced tomatoes with basil, oregano and garlic, undrained
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon capers, drained
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon crushed red pepper flakes
  • 1 lb uncooked small (30 to 40 count) shrimp, peeled, deveined
  • 1/2 cup crumbled reduced-fat feta cheese (2 oz)
Instructions:
  • Start by bringing water to a boil in a 2-quart saucepan. Add bulgur, then reduce heat to low and cover. Let it simmer for approximately 12 minutes, or until the water is fully absorbed.
  • In a 12-inch skillet, heat oil over medium heat. Sauté onion for about 4 minutes until tender, then pour in wine and cook for 1 minute, stirring frequently.
  • Mix in the tomatoes, 1 1/2 tablespoons of parsley, capers, black pepper, and red pepper flakes with the onion. Cook for 3 minutes. Add the shrimp, cover, and cook for 4 to 5 minutes until the shrimp turn pink.
  • Combine the cooked bulgur with the shrimp mixture and gently mix. Top with a generous sprinkle of cheese. Cover and let it cook for 2 minutes. Finish by garnishing with the remaining 1 1/2 tablespoons of fresh parsley. Enjoy!
