Feta Cheese, Lemon and Chive Turnovers

Create golden, flaky triangles bursting with savory Mediterranean cheese filling using puff pastry.
Ingredients:
  • 2 oz crumbled garlic-and-herb feta cheese
  • 2 tablespoons thinly sliced fresh chives
  • 2 medium green onions, sliced (2 tablespoons)
  • 1/2 teaspoon grated lemon peel
  • Flour for dusting
  • 1 sheet frozen puff pastry (from 17.3-oz package), thawed
Instructions:
  • Preheat oven to 400°F. Mash cheese in a medium bowl using a fork. Mix in chives, onions, and lemon peel until fully combined.
  • Roll out the pastry sheet on a lightly floured surface into a 12-inch square. Divide the pastry into 16 smaller squares by cutting it into 4 rows by 4 rows. Place a rounded teaspoon of the cheese mixture in the center of each square.
  • Moisten the edges of each square with a wet fingertip. Fold the square over the filling to create a triangle, ensuring to press gently to eliminate any air pockets and seal the pastry edges together. Use a fork to crimp and seal the turnover edges. Repeat with the rest of the squares. Make sure the turnover edges are even using a spatula, then place them on an ungreased cookie sheet.
  • Bake for 10 to 15 minutes until perfectly puffed and golden. Transfer from the cookie sheet to a cooling rack and let cool for 2 to 3 minutes before serving.
