Refreshing Greek Orzo Salad with feta, olives, fresh herbs, tomatoes, olive oil, and lemon dressing. Sub dried herbs if needed.
Ingredients:
  • salt and pepper to taste
  • 0.125 cup lemon juice
  • 1 cup uncooked orzo pasta
  • 0.25 cup pitted green olives
  • 1 cup diced feta cheese
  • 3 tablespoons chopped fresh parsley
  • 3 tablespoons chopped fresh dill
  • 1 ripe tomato, chopped
  • 0.25 cup virgin olive oil
Instructions:
  • Bring a pot of lightly salted water to a boil. Cook orzo until al dente, about 8 to 10 minutes. Drain and rinse with cold water.
  • Transfer the cooled orzo to a bowl and gently combine with olives, feta cheese, parsley, dill, and tomato.
  • Combine the oil and lemon juice in a small bowl. Drizzle the mixture over the orzo and toss until well coated. Season with salt and pepper, then refrigerate before serving.
