Mediterranean orzo salad with artichokes, tomatoes, olives, Parmesan cheese, and balsamic dressing - perfect for any meal!
Ingredients:
  • 2 cups uncooked orzo pasta
  • 0.5 cup extra-virgin olive oil
  • 0.25 cup balsamic vinegar
  • 1 tablespoon chopped fresh basil, or to taste
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 2 tomatoes, chopped
  • 1 (6 ounce) can sliced black olives, drained
Instructions:
  • 1. Boil a big pot of lightly salted water. Add orzo and cook, stirring occasionally, until al dente, about 8 to 10 minutes. Drain well.
  • Combine the olive oil, balsamic vinegar, and basil in a small bowl and whisk until well blended for the dressing.
  • In a large bowl, mix together cooked orzo, artichoke hearts, tomatoes, olives, and Parmesan cheese. Stir in the dressing until everything is well coated. Serve warm or chilled.
