Upgrade ham leftovers with orzo, bell pepper, and cherry tomato pasta salad in a creamy dressing.
Ingredients:
  • 0.66666668653488 cup uncooked orzo pasta
  • 0.25 cup mayonnaise
  • 0.25 cup sour cream
  • 1 tablespoon cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon yellow mustard
  • 2 tablespoons chopped fresh chives
  • 0.5 teaspoon white sugar
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt
  • 1.5 cups chopped fully cooked ham
  • 1 cup diced red onion
  • 0.5 cup chopped green bell pepper
  • 0.5 cup halved cherry or grape tomatoes
Instructions:
  • 1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. 2. Add the orzo to the boiling water and cook uncovered, stirring occasionally, until al dente, for about 11 minutes. 3. Drain the cooked orzo and rinse with cold water in a colander in the sink.
  • Combine mayo, sour cream, cider vinegar, Dijon mustard, yellow mustard, chives, sugar, black pepper, and salt in a bowl, whisk until smooth.
  • Combine the cooked and cooled pasta with ham, red onion, green pepper, and tomatoes in a spacious bowl. Drizzle with the dressing, toss gently to coat everything. Chill in the fridge for 30 minutes prior to serving.
