Baked Salmon with Lemony Orzo and Basil-Bacon Peas

Orzo pasta with zesty lemon-basil bacon, peas, and savory baked sockeye salmon - a delicious family-friendly weeknight meal.
Ingredients:
  • 1 cup orzo
  • 2 teaspoons garlic powder
  • 5 large basil leaves, thinly sliced, divided
  • 2 teaspoons sea salt, divided
  • 1 (1 1/2 pound) skin-on, sockeye salmon
  • 0.25 cup butter, melted, divided
  • 3 slices bacon, chopped
  • 1 (16 ounce) package frozen peas
  • freshly ground black pepper to taste
  • 2 lemons, juiced, divided
Instructions:
  • Preheat your oven to 450 degrees F (230 degrees C) and prepare a baking pan by lining it with aluminum foil or parchment paper.
  • 1. Bring a large pot of salted water to a rolling boil. 2. Add orzo and cook until al dente, about 10 minutes, stirring occasionally. 3. Drain the orzo and it's ready to use.
  • Combine garlic powder, 4 fresh basil leaves, and 1/2 teaspoon of salt in a small bowl.
  • Lay the salmon skin side-down on the pan, brush with 1 tablespoon of butter, and sprinkle the garlic-basil mixture on top.
  • Cook the salmon in the preheated oven until it easily flakes with a fork, for approximately 8 minutes. Take it out and allow it to rest.
  • Cook bacon in a skillet over gentle heat until crispy, stirring occasionally, about 4 minutes. Sprinkle with 1/2 teaspoon salt, add peas, and season with pepper. Continue cooking and stirring until peas are warmed through, 3 to 4 minutes.
  • Combine the 3 tablespoons of butter, lemon juice, and 1 teaspoon of salt in a bowl. Drizzle the mixture over the cooked orzo, tossing to evenly coat. Season generously with pepper.
  • Plate the orzo evenly among 4 plates, layer with salmon, and position peas to the side. Sprinkle with the rest of the basil and finish with a drizzle of the remaining lemon juice.
