"Simple baked salmon with lemon garlic butter and herbs, perfect for a quick and tasty weeknight meal."
Ingredients:
  • 2 pounds whole salmon fillet, skinned
  • 1/2 teaspoon pepper
  • 4 tablespoons unsalted butter, melted and cooled
  • 4 cloves garlic, grated or finely minced
  • 1 1/2 teaspoon honey
  • 1 1/2 teaspoon fresh lemon juice
  • 2 tablespoons fresh herbs (basil, chives, or parsley) chopped
Instructions:
  • Prepare your oven and baking sheet: Position the rack in the center of the oven. Preheat it to 375°F. Line a large-rimmed baking sheet with foil, allowing ample overhang on both long ends for creating a foil packet.
  • Prepare the salmon: Let the salmon sit out for 15 to 20 minutes while the oven preheats. Pat both sides dry with a paper towel and carefully remove any bones using fish tweezers or your fingers. Place the salmon on the prepared pan.
  • Season both sides of the salmon generously with a pinch of salt and a crack of black pepper for a perfect balance of flavors.
  • Prepare the luscious butter sauce by mixing together melted butter, garlic, honey, and lemon juice in a small bowl. Gently pour this aromatic mixture over the salmon, ensuring it's evenly distributed. Fold the edges of the foil to lock in all the flavors.
  • Wrap the salmon securely in foil by bringing the two long sides together and folding them down a few times to create a sealed packet. Tuck in the ends to secure the sides. If needed, use a second sheet of foil to fully cover the salmon, pinching the edges closed.
  • For farm-raised salmon, bake for 18 to 20 minutes based on thickness. For wild-caught salmon, start checking at 10 minutes. If not done, reseal foil, return to oven, and check every 2 to 3 minutes until opaque & flakes easily.
  • Unwrap the salmon from the foil, ensuring it is fully exposed. Switch the oven to high broil. For electric ovens, place the salmon back on the middle rack. Broil for 2 to 3 minutes until lightly golden with a touch of char, being cautious not to scorch the garlic. For gas ovens, consider reducing to 1 minute or skipping broiling altogether.
  • Let the salmon rest for 5 minutes, then top with chopped herbs before serving on a platter or directly from the pan!
