Delicious and easy baked salmon with zesty lemon and fresh parsley for a light dinner option.
Ingredients:
  • 6 tablespoons light olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 2 (6 ounce) fillets salmon
Instructions:
  • Combine the olive oil, garlic, lemon juice, parsley, basil, salt, and pepper in a medium bowl and whisk until well combined.
  • Lay salmon fillets in a small glass or ceramic baking dish and generously coat with the marinade. Cover and refrigerate for approximately 1 hour, gently turning them now and then for an even soak.
  • Preheat the oven to 375°F (190°C) for the perfect bake.
  • Lay the salmon fillets on a generous piece of aluminum foil. Drizzle marinade over them, then fold and seal the foil. Arrange the foil packs on a baking sheet.
  • Cook the fish in a preheated oven until it easily flakes with a fork, for around 35 to 45 minutes.
  • Enjoy your dish piping hot!
