Classic Chicken Marbella: Succulent baked chicken marinated with prunes, garlic, olives, and red wine vinegar for a sweet and tangy taste sensation.
Ingredients:
  • 0.33333334326744 cup pitted prunes, halved
  • 8 small green olives
  • 2 tablespoons capers, with liquid
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon dried oregano
  • 2 bay leaves
  • salt and pepper to taste
  • 1 (3 pound) whole chicken, skin removed and cut into pieces
  • 0.25 cup packed brown sugar
  • 0.25 cup dry white wine
  • 1 tablespoon chopped fresh parsley, for garnish
Instructions:
  • In a medium bowl, mix prunes, olives, capers, olive oil, vinegar, garlic, oregano, bay leaves, salt, and pepper until well combined. Spread mixture in a 10x15-inch baking dish. Add chicken pieces, coat them by stirring and turning. Cover and refrigerate overnight.
  • Preheat the oven to 350°F (175°C), then generously sprinkle marinated chicken with brown sugar and surround it with white wine for a delightful flavor infusion.
  • Roast the chicken in the oven, basting with juices periodically, for 1 hour. Present on a platter, drizzle with pan juices, and garnish with fresh parsley.
