Mediterranean Chicken Kabobs

Marinated chicken kabobs bursting with flavor from fresh herbs, garlic, and lemon for a light and satisfying meal.
Ingredients:
  • 3 large cloves garlic, crushed
  • 2 tablespoons finely chopped fresh or 2 teaspoons dried rosemary leaves
  • 1 tablespoon finely chopped fresh or 1 teaspoon dried oregano leaves
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup fresh lemon juice
  • 6 tablespoons olive oil
  • 1 1/2 lb boneless skinless chicken breasts, cut into 1-inch pieces
  • 1 large red bell pepper, cut into 1-inch pieces
  • 1 large red onion, cut into 1-inch wedges
Instructions:
  • Combine garlic, rosemary, oregano, 1/2 tsp salt, 1/4 tsp pepper, 3 tbsp lemon juice, and 5 tbsp oil in a dish or bag. Add chicken and coat well. Refrigerate for 30 minutes to marinate.
  • Preheat gas or charcoal grill. Combine 1/2 teaspoon salt, 1/4 teaspoon pepper, 1 tablespoon lemon juice, and 1 tablespoon oil in a small bowl; set aside.
  • Thread marinated chicken, bell pepper, and onion pieces onto 6 metal skewers, allowing for space between each ingredient, discarding any remaining marinade.
  • Place skewers on the grill over medium-high heat. Cook covered for 8 to 10 minutes, turning occasionally and brushing with lemon juice mixture until chicken is cooked through and vegetables are tender. Discard any leftover lemon juice mixture.
