Lemon-seasoned tilapia grilled with red onion, perfect for a light lunch. Enjoy with a side of Greek salad.
Ingredients:
  • 0.25 large lemon
  • 1 (6 ounce) tilapia fillet, patted dry
  • salt and ground black pepper to taste
  • 1 tablespoon extra-virgin olive oil
  • 1 teaspoon butter, divided
  • 0.25 large red onion, coarsely chopped
  • 1 teaspoon minced garlic
  • 1 tablespoon grated fresh Parmesan cheese
Instructions:
  • Drizzle tilapia with fresh lemon juice and season with a pinch of salt and black pepper.
  • In a nonstick skillet over medium heat, warm olive oil and melt 1/2 teaspoon of butter. Add chopped onion and minced garlic, sauté until onion turns translucent, approximately 5 minutes.
  • Lower the heat to medium-low and move the onion mixture to the sides of the skillet. Melt the remaining 1/2 teaspoon of butter in the skillet. Place the tilapia in the center and top it with the onion mixture. Cover and cook until the tilapia turns golden, around 5 minutes. Slide the onion mixture to the sides, flip the tilapia, cover, and cook until the second side is golden and flakes easily with a fork, about 5 more minutes.
  • After cooking the tilapia, sprinkle it with grated Parmesan cheese, cover it, and allow it to sit until the cheese is melted, for about 2 to 3 minutes off the heat.
