Tilapia with Cucumber Salad

Crispy tilapia with fresh salad ready in under 30 minutes.
Ingredients:
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 2 teaspoons grated gingerroot
  • 1/2 teaspoon salt
  • 1/2 medium cucumber, cut in half lengthwise, thinly sliced
  • 1/4 red bell pepper, diced
  • 3 green onions, thinly sliced
  • 1 teaspoon chopped fresh cilantro
  • 2 tablespoons Gold Medal™ all-purpose flour
  • 1 teaspoon lemon-pepper seasoning
  • 1 cup Progresso™ panko crispy bread crumbs or Progresso™ plain bread crumbs
  • 1 egg
  • 4 tilapia or other white fish fillets (6 oz each)
  • 4 tablespoons vegetable oil
Instructions:
  • Combine the dressing ingredients in a medium bowl, then toss in the salad ingredients until evenly coated.
  • First, combine the flour and seasoning on a plate. Then, spread the bread crumbs on a second plate. In a bowl, whisk the egg with a fork. Next, coat the fish with the flour mixture, dip it into the beaten egg, and ensure it is well coated with bread crumbs.
  • 1. Heat 2 tablespoons of oil in a nonstick skillet over medium-high heat. Cook 2 fish fillets for 3 minutes. Flip the fish and reduce heat to medium; cook for an additional 3 minutes or until flaky. Repeat with the remaining oil and fish. Serve fish topped with salad.
