Garlic-infused vegetable soup with tender game hen in a savory broth.
Ingredients:
  • 1 Rock Cornish hens
  • 2 tablespoons vegetable oil
  • 5 stalks celery, chopped
  • 3 large carrots, diced
  • 1 onion, chopped
  • 6 cloves garlic, minced
  • 3 potatoes, peeled and cubed
  • 1 (48 fluid ounce) can chicken broth
Instructions:
  • First, discard the gizzards and give the hen a thorough wash. Then, cut the hen into several pieces.
  • In a large pot, heat oil until shimmering. Add hen pieces and sear until golden on all sides. Stir in carrots, celery, onions, garlic, and potatoes; cook until onions are soft and translucent.
  • Add the chicken broth, adjusting the amount to your preference while ensuring all ingredients are submerged. Bring to a boil, then lower the heat and simmer until vegetables are tender and chicken is fully cooked.
  • Take out the hen from the pot, separate the meat from the bones, discard the bones, and add the meat back to the soup. Serve.
