Divine pink rice dessert with pineapples, marshmallows, and whipped cream.
Ingredients:
  • 1.5 cups water
  • 0.75 cup uncooked white rice
  • 2 cups crushed pineapple, drained
  • 1 (10.5 ounce) package miniature marshmallows
  • 1 (4 ounce) jar maraschino cherries, halved
  • 1 cup heavy cream
  • 0.5 cup confectioners' sugar, or to taste
Instructions:
  • Bring water to a boil in a saucepan, then stir in rice. Cover, simmer for 20 minutes over low heat, and cool completely.
  • Combine rice, pineapple, marshmallows, cherries, and 1 tablespoon cherry juice in a large bowl. In a chilled bowl, whip cream until peaks form, then fold in confectioners sugar. Gently fold whipped cream into rice mixture and refrigerate for 2 hours.
