Try irresistible cheesy chicken schnitzel rolls with tangy homemade tomato sauce for a kid-approved lunchbox favorite.
Ingredients:
  • 2 slices wholemeal bread with grains, crusts removed
  • Olive oil cooking spray
  • 2 chicken breast schnitzels (uncrumbed)
  • 82.50 ml grated reduced-fat tasty cheese
  • 1.25 gm pizza topper seasoning
  • 40.00 ml panko breadcrumbs
  • 9.20 gm extra virgin olive oil
  • 1/2 small brown onion, finely chopped
  • 1 small celery stalk, finely chopped
  • 1/2 small carrot, finely diced
  • 1 small garlic clove, crushed
  • 410g can crushed tomatoes
  • 2.50 gm caster sugar
Instructions:
  • Preheat your oven to 220C/200C fan-forced and prepare 2 baking trays by lining them with baking paper.
  • Lay out the bread slices and gently flatten them with a rolling pin. Cut each slice into 4 triangles and place them on a prepared tray. Lightly spray with oil and bake for 5 minutes, turning halfway, until golden and toasted. Cool on a wire rack.
  • Place the chicken on a chopping board and gently flatten it with the palm of your hand. Sprinkle cheese and half of the pizza seasoning evenly. Roll up the chicken from one short end to enclose the filling, securing it with two toothpicks. Transfer the chicken to the tray. Spray with oil and then sprinkle with breadcrumbs and the rest of the pizza seasoning. Bake for 15 to 20 minutes until golden and fully cooked. Allow it to cool before serving.
  • Prepare the Tomato Sauce: In a frying pan over medium-high heat, heat oil and sauté onion, celery, and carrot for 10 minutes until softened. Add garlic and cook for 1 minute until fragrant. Stir in tomatoes, sugar, and 1/3 cup of water, bring to a boil, then reduce heat to medium-low. Simmer for 6 to 8 minutes until slightly thickened. Cool completely and store in 2 x 1-cup-capacity airtight containers in the refrigerator until needed.
  • Slice each chicken breast into 4 pieces. Chill until needed. Serve in a bento box with tomato sauce and toasted bread.
