Cheesy Swiss-topped chicken rolls filled with ham, served on seasoned rice for a satisfying meal.
Ingredients:
  • 4 cups boiling water
  • 2 boxes (6 oz each) sun-dried tomato Florentine long grain and wild rice mix
  • 4 large boneless skinless chicken breasts
  • 8 slices thick-sliced fully cooked deli ham (about 10 oz)
  • 1/4 cup diced red bell pepper
  • 4 slices (1 oz each) Swiss cheese, cut in half
Instructions:
  • Preheat your oven to 350°F and generously coat a 13x9-inch (3-quart) baking dish with cooking spray.
  • Combine boiling water, rice, and rice seasoning mixes in a baking dish and stir well.
  • Cut each chicken breast in half lengthwise and wrap a slice of ham around each piece. Stir bell pepper into rice and spread it in a baking dish. Place the wrapped chicken on top of the rice, cover with foil, and bake for 40 to 45 minutes. Uncover and bake for an additional 10 minutes until the liquid is absorbed and the chicken is cooked through.
  • Sprinkle cheese over each chicken breast and bake until cheese is gooey and melted, about 3 to 4 minutes.
