Quick and flavorful Mexican chicken schnitzel with spicy slaw ready in under 10 minutes.
Ingredients:
  • 80g sachet garlic and herb schnitzel mix
  • 2 tsp Mexican chilli powder
  • 130.00 gm buttermilk
  • 500g chicken schnitzel (uncrumbed)
  • 36.40 gm extra virgin olive oil
  • 62.50 ml plain Greek-style yoghurt
  • 2 tsp chipotle hot sauce
  • 42.00 gm lime juice
  • 250g packet rainbow slaw
  • 62.50 ml fresh coriander leaves
  • Salad leaves, to serve
Instructions:
  • Mix the schnitzel mix and chili powder in a bowl, then season with salt and pepper. Pour the buttermilk into a separate bowl.
  • Take each piece of chicken individually and dip it in rich and creamy buttermilk before generously coating it with a flavorful breadcrumb mixture. Lay each coated piece on a plate, ready to be cooked to perfection.
  • In a large frying pan over medium-high heat, heat oil until shimmering. Cook chicken in two batches, turning occasionally, until golden and fully cooked, about 3 to 4 minutes per batch. Drain on paper towels.
  • Combine tangy yogurt with spicy hot sauce and zesty lime juice. Mix slaw and fresh coriander leaves in a large bowl. Drizzle with the yogurt dressing and toss thoroughly. Serve the flavorful chicken alongside the vibrant slaw and salad.
