Chicken schnitzel with spicy wedges and barbecue sauce

Crispy chicken schnitzel with zesty barbecue sauce, served with fresh veggies for a healthier twist.
Ingredients:
  • 10.00 gm cajun seasoning
  • 4 eggwhites
  • 800g chat potatoes, cut into wedges
  • olive oil cooking spray
  • 500g chicken thigh
  • 82.50 ml plain flour
  • 187.50 ml dried breadcrumbs
  • 20.00 ml chopped fresh parsley leaves
  • 1 brown onion, thinly sliced into rings
  • 2 garlic cloves, crushed
  • 23.40 gm dijon mustard
  • 65.00 gm tomato sauce
  • 24.40 gm worcestershire sauce
  • 20.00 ml red wine vinegar
  • 45.00 gm brown sugar
  • steamed vegetables, to serve
Instructions:
  • Preheat oven to 220°C/200°C fan-forced and lightly grease 2 baking trays. In a bowl, whisk seasoning and 2 eggwhites, then add potato and toss to coat. Place the potatoes on one of the trays in a single layer and lightly spray with oil. Bake for 35 to 45 minutes, turning occasionally, until tender.
  • Prepare the chicken by sandwiching it between two sheets of plastic wrap. Tenderize it with a meat mallet until it reaches a 5mm thickness. Set up a plate with flour, a shallow bowl with lightly whisked egg whites, and another plate with a mixture of breadcrumbs and parsley.
  • Prepare the chicken by coating it in flour, then dip it in eggwhite, and coat it with the breadcrumb mixture. Repeat the process for the remaining chicken pieces. Lightly spray with oil and bake for 20 to 25 minutes until golden brown and fully cooked.
  • Prepare the barbecue sauce: Coat a saucepan with oil and heat over medium heat. Sauté onion and garlic until softened, for about 3 to 4 minutes. Stir in mustard, tomato sauce, Worcestershire sauce, vinegar, sugar, and 1/4 cup of cold water. Bring the mixture to a boil, then reduce heat to medium-low and simmer until slightly thickened, for another 3 to 4 minutes.
  • Arrange the chicken and potato wedges on plates, drizzle generously with the delicious sauce, and serve alongside your favorite vegetables.
