Sheet-Pan Chicken and Broccoli

Easy sheet-pan yogurt chicken with roasted broccoli for a simple and delicious dinner!
Ingredients:
  • 1/2 cup Progresso™ plain bread crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/2 cup Mountain High™ lowfat plain yoghurt
  • 1 egg, slightly beaten
  • 1 teaspoon Dijon mustard
  • 1 lb boneless skinless chicken tenders
  • 4 cups broccoli florets (from about 1 small head broccoli)
  • Cooking spray
Instructions:
  • Preheat oven to 375°F. Cover a 18x13-inch rimmed baking sheet with foil and generously spray with cooking spray.
  • Combine bread crumbs, 1/4 teaspoon salt, and garlic powder in a shallow dish. In a separate small bowl, whisk together yogurt, egg, and mustard. Coat chicken tenders in yogurt mixture, then dredge in bread crumb mixture. Place chicken tenders in a single layer on a baking sheet. Surround the chicken with broccoli florets on the same baking sheet. Lightly coat everything with cooking spray and sprinkle with remaining 1/4 teaspoon salt.
  • Bake for 20 to 25 minutes until the chicken is cooked through and the broccoli is tender-crisp.
