Whip up a simple sheet pan chicken dish with flavorful pesto, gooey mozzarella, roasted broccoli, and juicy tomatoes for a stress-free and delicious weeknight meal!
Ingredients:
  • 2 pounds boneless chicken breasts
  • 2 teaspoons garlic salt
  • 6 tablespoons pesto
  • 2 medium Roma (plum) tomatoes, thinly sliced
  • 1.5 cups shredded mozzarella cheese
  • 1 head broccoli, cut into florets
  • salt to taste
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and lightly grease a large sheet pan.
  • Season the chicken with aromatic garlic salt and pungent pepper. Arrange the chicken on the baking sheet. Smother the chicken with flavorful pesto, and then sprinkle with juicy tomatoes and creamy mozzarella.
  • Combine broccoli florets with olive oil in a bowl, ensuring they are evenly coated; season with salt and pepper. Arrange the broccoli around the chicken on the baking sheet.
  • Roast in the oven until the broccoli is tender, chicken is fully cooked, and the juices run clear, about 15 to 20 minutes. Use an instant-read thermometer in the center to ensure it reaches 165 degrees F (74 degrees C).
