Create a delicious and affordable dinner with just six simple ingredients!
Ingredients:
  • 450g potato
  • 450g sweet potato
  • 57.50 gm rice bran oil
  • 4 (150g each) crumbed chicken schnitzels
  • 181.50 gm tomato pasta sauce with basil
  • 165.00 ml grated mozzarella cheese
Instructions:
  • Preheat the oven to 240°C/220°C fan-forced. Line a large baking tray with parchment paper. Combine potato and sweet potato in a bowl with 1 tablespoon of oil. Season with salt and pepper, then mix well. Spread the coated potatoes on the tray. Bake for 25 to 30 minutes until they are golden and crispy.
  • Heat the remaining oil in a frying pan over medium-high heat. Cook the schnitzels in batches for 3 minutes on each side until they are golden and fully cooked, adding more oil if necessary. Place the cooked schnitzels on a baking tray lined with foil.
  • Preheat the grill to medium heat. Spread 2 tablespoons of pasta sauce on each schnitzel, then add cheese on top. Grill for 3 to 4 minutes until the cheese is melted and golden. Serve with the potato mixture.
