Effortlessly whip up a speedy keto sheet pan meal featuring juicy chicken, cauliflower, and broccoli for a hassle-free dinner ready in just 30 minutes.
Ingredients:
  • 0.75 teaspoon garlic powder
  • 0.75 teaspoon onion powder
  • 0.25 teaspoon ground black pepper
  • 1 pound chicken tenders
  • 6 slices bacon, or more to taste
  • 1 pound asparagus spears, trimmed and halved crosswise
  • 3 tablespoons olive oil, divided
  • 1 (14 ounce) package cauliflower rice
  • 0.25 cup Buffalo-style hot pepper sauce
Instructions:
  • Preheat the oven to 425 degrees F (220 degrees C) and line a 12x18-inch rimmed baking sheet with aluminum foil.
  • In a bowl, mix garlic powder, onion powder, and black pepper. Season both sides of chicken tenders with the mixture. Wrap each tender with a slice of bacon and place them at the center of the baking sheet.
  • Lay asparagus spears next to the chicken. Season generously with salt and pepper, then lightly drizzle with 1 tablespoon of oil.
  • Spread the riced cauliflower beside the chicken, season with salt and pepper to your liking, and finish with a drizzle of the remaining 2 tablespoons of olive oil.
  • Roast cauliflower and asparagus in the preheated oven for 13 to 15 minutes, giving them a good stir halfway through.
  • Preheat oven to broil. Cook until bacon is crispy, chicken is fully cooked through, and reaches an internal temperature of 165°F (74°C), about 2 to 3 minutes.
  • Take the tenders out of the oven and generously drizzle them with hot sauce. Enjoy immediately, or portion them into containers and place in the refrigerator for later.
