Delicious low-carb streusel bars with a sweet-tart flavor from fresh cranberries, ideal for keto diets.
Ingredients:
  • cooking spray
  • 2 cups almond flour
  • 0.33333334326744 cup low-calorie natural sweetener (such as Swerve®), or more to taste
  • 6 tablespoons butter, melted
  • 1 teaspoon almond extract
  • 2 cups fresh cranberries
  • 0.25 cup orange juice
  • 1 teaspoon grated orange zest
  • 0.25 teaspoon arrowroot powder
  • 0.33333334326744 cup chopped pecans
  • 0.5 teaspoon ground cinnamon
Instructions:
  • Preheat the oven to 350°F (175°C) and generously coat an 8x8-inch baking pan with cooking spray.
  • Combine almond flour, sweetener, melted butter, and almond extract in a medium bowl, mixing well. Reserve 1/3 of the mixture for the streusel topping and press the remaining 2/3 into the baking pan.
  • Bake in the preheated oven until lightly golden, approximately 5 minutes, then remove and set aside.
  • In a small saucepan, mix together cranberries, sweetener, orange juice, orange zest, and arrowroot powder. Cook over medium heat until cranberries burst, approximately 10 minutes. Allow to cool for 5 minutes, then spread the cranberry filling over the crust.
  • Mix the pecans and cinnamon into the leftover crust mixture until well combined. Sprinkle the streusel topping evenly over the cranberry mixture.
  • Bake in the preheated oven for about 30 minutes until set. Allow to cool completely before cutting into bars, which may take 30 minutes to 1 hour.
