Elevate your roasted potatoes with zesty lemon and aromatic za'atar for a crispy, flavorful twist.
Ingredients:
  • 3 pounds large (about 4-inch) Yukon gold potatoes
  • 1/2 cup olive oil
  • 1 tablespoon kosher salt, or to taste
  • 1/2 cup freshly squeezed lemon juice (from about 3 lemons)
  • 1/2 cup cold water
  • 1 tablespoon za’atar seasoning, plus more for garnish
  • 1/2 cup crumbled feta, for serving (optional)
  • 1/3 cup chopped fresh dill, for serving (optional)
Instructions:
  • Begin by heating your oven to a toasty 450°F.
  • Prepare the potatoes: Cut each potato in half, and then in half again. Slice each piece in the opposite direction to create 8 roughly 2-inch pieces per potato.
  • Drizzle oil over the potatoes: Drizzle the olive oil and sprinkle kosher salt over the potatoes on a rimmed half-sheet pan. Place the potatoes cut-side down in a single layer. Combine lemon juice and water in a measuring cup or small bowl, then drizzle over the potatoes on the sheet pan.
  • Roast the potatoes in the oven until deeply golden brown and tender, about 30 minutes. Sprinkle with za’atar, toss, and continue roasting until all liquid evaporates, flipping every 10 minutes until both sides are golden and fork-tender.
  • To finish: Taste and adjust seasoning, adding a sprinkle of salt if desired. Top with additional z’atar, feta, and dill (if preferred). Enjoy promptly. Store any leftovers in a sealed container in the refrigerator for up to 3 days. If you loved the dish, please consider rating it below!
