"Enjoy zesty lemon potatoes and beans alongside succulent roast lamb, skipping the extra veggie prep."
Ingredients:
  • 1kg chat potatoes, quartered
  • 56.88 gm extra virgin olive oil
  • 1 lemon, cut into 8 wedges
  • 2 sprigs fresh thyme
  • 65.63 gm lemon juice
  • 250g green beans, trimmed
  • Lemon zest, to serve
  • Fresh thyme sprigs, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced for the perfect cooking temperature.
  • In a large roasting pan, arrange the potatoes and drizzle with oil. Season generously with salt and pepper, then toss to coat. Add lemon wedges and thyme to enhance the flavors.
  • Roast everything for 40 minutes, then add juice and beans to the pan. Bake for 15 more minutes until potatoes and beans are tender. Serve topped with zest and thyme.
