Pan Roasted Spanish-Lemon Drumsticks with Potatoes

Garlic and lemon roasted chicken drumsticks and potatoes, a delicious and easy dish.
Ingredients:
  • 3 pounds bone-in chicken drumsticks
  • 1 tablespoon paprika
  • 3 tablespoons olive oil, divided
  • 1.5 tablespoons chopped garlic, divided
  • 0.75 teaspoon salt, divided
  • 0.5 teaspoon ground black pepper, divided
  • 2 pounds red potatoes
  • 2 lemons, thinly sliced
Instructions:
  • Preheat your oven to a toasty 450 degrees F (230 degrees C).
  • Coat chicken with paprika, olive oil, garlic, salt, and pepper until well combined. Toss potatoes with remaining ingredients, including lemon slices, until fully coated.
  • Place the chicken in a roasting pan and artfully layer potatoes and lemon slices around the chicken.
  • Roast in the oven for 25 minutes, then turn and flip the chicken and potatoes. Keep roasting until the chicken is cooked through and the potatoes are tender, for another 20-30 minutes. Check for doneness by inserting an instant-read thermometer near the bone - it should read 165 degrees F (74 degrees C).
